Annie’s Il Diplomatico Espresso Dessert

This no-bake tiramisu-style dessert is a Byron Bay Coffee Company favourite. “Il Diplomatico” (Italian for “The Diplomat”) is just that, a true peacekeeper. This dessert can pacify even the toughest critic.

So easy to prepare and absolutely delicious, here is Byron Bay Coffee Company Ambassador Extraordinaire Annie’s version.

Ingredients:

2 cups Byron Bay Coffee Company espresso

100g quality dark chocolate

1 packet Savoiardi sponge finger biscuits

3 eggs

5 teaspoons sugar

5 tablespoons cold water

1 packet of hazelnuts

Generous dash of Marsala

 

Method:

Separate eggs

Beat egg yolks

Beat egg whites to a meringue like consistency

Melt chocolate in a heatproof bowl over a pan of simmering water

Fold in beaten eggs and mix well

Combine coffee, water, sugar and Marsala in a bowl and stir until the sugar is dissolved

Dip biscuits into bowl

Line a baking dish with soaked biscuits

Pour a layer of the chocolate mixture over biscuits

Sprinkle with crushed hazelnuts

Repeat with layer of soaked biscuits

Apply pressure

Cover with foil and refrigerate

 

Tips:

Best made 2-3 days prior to serving

Can last between 10-15 days

 

Serve with fresh berries, cream and a sprig of mint.
